So I've been doing the Gluten and Dairy free thing for a while now so I thought a good post to start with would be a pantry list. This list is fluid and will change as my tastes and experiences change. As I experiment with new and different flours and ingredients I will add, but I promise, never remove, certain ingredients. Notice that there are zero weird ingredients (no xantham gum/guar gum potato starch) everything on my list can be bought at a supermarket in New Zealand
DRY
- Almond meal
- Buckwheat
- Coconut Flour
- Cornflour
- Corn Meal
- Chickpea flour (also known as gram or besan)
- LSA (ground almond, sunflower seeds and linseeds)
- Rice Flour
- Brown sugar
- Caster sugar

- Raw nuts (assorted)
- Rice bubbles

- Oatmeal (certified gluten free)

- Edit: Powdered Coconut milk (yes that's actually a thing and no its not expensive)

- Almond milk (or other lactose free milk) I now buy Almond and Coconut Milk
- Coconut cream

- Dairy free margarine or coconut oil
- Oil (canola or other all purpose oil)
- Essences (assorted: including vanilla and peppermint)
- Pureed fruit (including apple, banana and berries)
- Sauces ( tomato, aoli, mayonnaise, BBQ (read the label) Mint)
- Edit: Cocoa Butter (not too expensive and a tasty butter alternative in cookies plus as a bonus you can make your own chocolate, just make sure it's the eating kind and not the cosmetic kind)

- 20-25 cm round spring-form pan
- 20-25 cm square tin

- Large cookie sheet
- Muffin tins (round and square bottomed)
- Large pot with lid
- Roasting dish
- Microwave safe plastic containers
- Electric mixer (preferably stand mixer but a hand mixer works)
- Spatula
- Set of measuring cups
- Scales
- Baking paper
- Sandwich size resealable bags
- Piping bag
- Variety of decorating tips including open stars, closed stars, variety of round tip sizes, basket weave tip, leaf tip, flower tip)
- Gel food coloring (I use wilton brand)
- Fondant
