Dairy Free Caramel Sauce in the Microwave

I needed a super quick and easy caramel sauce recipe for tomorrow's post and found this one from gal on a mission. It seemed so easy I figured I could swap out the dairy ingredients for non-dairy and voila, exactly what I needed.




Soooo
You will need:

25g Butter Substitute
100g Brown Sugar
25ml Coconut Cream
1tsp Vanilla extract

Melt the butter, then add all the other ingredients and mix well


Pop it in the microwave and cook on high for about 2 minutes, keep a close eye on it otherwise 
um yeah this:


Batch 2 on the other hand worked out perfectly, the secret? Use a container that holds at least twice as much mixture as what you have and keep an eye on it and stop it if it looks like it might boil over.
