Gluten and Dairy Free Ice-cream Sundae Cups

Summer is coming!
I almost can't believe it, the sun made me want to go to the beach instead of to work. So in honour of more sunny days to come try this quick and easy homemade ice-cream sundae in an edible chocolate cup





For the cups you will need:

150g Dark chocolate
Silicon Muffin Cups (Texas Size)

For the Ice-Cream:

1 400ml (14fl. oz) tin full fat coconut cream, chilled
4 Tbsp Caster Sugar
1 Tbsp Vanilla
Sprinkles (optional)
2 Chocolate cupcakes (optional)
Other toppings of your choice
Ice-Cream maker (optional)


First of all, mix together the ice-cream ingredients and whisk until well combined


If you have an ice-cream maker, simply follow the directions specific to your model, mine requires that I pre-freeze the bowl overnight, set the mixer going and then pour the ice-cream mix in. Let it go for 30-40 min or until the ice-cream is a soft-serve consistency, put it in a freezer safe container and then freeze for a couple more hours.



In the mean time, make the chocolate cups.

Melt the chocolate, no need to temper as these will be served cold
Spoon about 2 teaspoons of melted chocolate into the cavities and spread around, covering all the sides.


Place the mold into the fridge for 10-15 minutes or until chocolate is firm, then go over with a second coat. Place back in the fridge for at least 30 minutes more to ensure the chocolate is completely set.

Remove carefully from the molds, the break fairly easily, I found it was best to pull at the sides and then flip the mold over and push from the bottom..


I crumbled up some chocolate cupcakes to put in the bottom of my sundaes, this is totally optional but I found it added just a little something extra, you could of course use nuts or candies are pretty much anything else you would have with ice-cream.

Finish it off with 2 scoops of homemade ice-cream and some sprinkles and enjoy!!
