Toasty Warm Vegan Gluten Free Peach Crumble

Winter has certainly made itself at home here in NZ. So what's better than curling up by the fire with a nice warm fruit crumble.



To make this deliciousness you will need

Crumble:

220g Almond meal
100g Butter Substitute (I used Alfa One)
100g Brown sugar
1tsp Cinnamon

Filling:

2 tins Peaches, drained
3 tbsp Cornflour
1tsp Cinnamon
50g white sugar
3 tbsp Lemon juice


Stir the cinnamon into the cornflour and sugar, then stir that mixture through the peaches
Follow that by adding the lemon juice.


Pour that mixture into a class or ceramic casserole dish


Mix together the remaining dry ingredients



Rub in the butter between your fingers, alternatively you can use a fork


Crumble the topping over the peach mixture then bake, uncovered, for 30-45 minutes at 180C or until the topping is golden brown
