Gluten and Dairy Free Lasagne

I had a weirdly specific craving today for lasagne. I wonder if it's because it has been so cold lately? Anyways I still had some leftover mozzarella that needed using up so I thought why not?





For this recipe you'll need

500g (1lb) beef mince (or lamb or chicken or vegan or whatever)
14 gluten free lasagne sheets ( I used san remo or you can make your own)
500g Pre-made pasta sauce 
1 batch white sauce with salt, pepper and dried mixed herbs to taste
Not pictured - 120g Vegan mozzarella
                                      - 2 Tbsp Vegan parmesan substitute
              - 1/2 onion, chopped
                    - 2 cloves garlic, minced
- 1 Tbsp Oil



On a medium heat, fry the onion and garlic until soft and fragrant, brown the mince and add the sauce, simmer for a few minutes and let cool slightly until assembly


Line the bottom of the dish with a thin layer of white sauce


Place the pasta sheets over the sauce


Spread a layer of the mince over the pasta


Spread another layer of white sauce over that


Add another layer of pasta and repeat until you run out, top with a final layer of pasta topped with white sauce and sprinkled with the mozzarella and parmesan. Bake at 180 C for 20-30 minutes or until the pasta has softened



I would recommend serving with a green salad
Serves about 6-8 depending on how hungry everyone is

Bonus : The fact that you didn't actually use cheese makes clean up a whole lot easier, no baked on cheese to scrape off baking dishes
